Indian-style Pasta Recipe

Ingredients:

  • 1 package of pasta
  • 2 cups of boiled and chopped vegetables (carrots, beans, peas, corn)
  • 2 tablespoons of olive oil
  • 1 tablespoon of ginger-garlic paste
  • 1 tablespoon of cumin seeds
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 1 green chili, chopped
  • 1/2 teaspoon of red chili powder
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of turmeric powder
  • 1 teaspoon of garam masala
  • Salt to taste

Instructions:

  1. Cook the pasta according to package instructions, drain and set aside.
  2. Heat the olive oil in a pan and add the cumin seeds. Once they start to splutter, add the ginger-garlic paste and sauté for a few seconds.
  3. Add the sliced onions and cook until they turn translucent.
  4. Add the chopped tomatoes and green chili, and cook until the tomatoes turn mushy.
  5. Add the boiled vegetables and mix well.
  6. Add the red chili powder, coriander powder, turmeric powder, and garam masala, and mix well.
  7. Add the cooked pasta and salt to taste. Mix well and cook for a couple of minutes.
  8. Garnish with cilantro and serve hot.
