Ingredients
- 8 oz spaghetti
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 medium zucchini, julienned
- 2 medium carrots, julienned
- 1 red bell pepper, julienned
- 1/2 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/4 cup vegetable broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Cook spaghetti according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat.
- Add onion and cook until softened, about 5 minutes.
- Add zucchini, carrots, bell pepper, and cherry tomatoes. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender.
- Add garlic and cook for 1 minute.
- Add vegetable broth and simmer until slightly reduced, about 2-3 minutes.
- Add cooked spaghetti to the skillet and toss to combine.
- Remove from heat and sprinkle with Parmesan cheese.
- Season with salt and pepper to taste.
