Ingredients:

  • 500g spaghetti
  • 4 garlic cloves, finely sliced
  • 4 tbsp olive oil
  • 1 tsp chilli flakes
  • 500g cherry tomatoes, halved
  • Salt and pepper, to taste
  • 1 cup Italian parsley leaves, roughly chopped
  • 1 cup basil leaves, roughly chopped
  • 1 cup Parmesan cheese, grated

Instructions:

  1. Cook spaghetti in a large pot of boiling salted water until al dente.
  2. While spaghetti is cooking, heat olive oil in a large frying pan over medium heat. Add garlic and chilli flakes, stirring until fragrant.
  3. Add cherry tomatoes to frypan and cook for 5 minutes or until they begin to break down. Season with salt and pepper to taste.
  4. Drain the spaghetti and add it to the frying pan. Toss for 2-3 minutes to fully coat it with the tomato sauce.
  5. Add parsley and basil to the frying pan and toss to combine.
  6. Serve hot with a sprinkle of Parmesan cheese.

Ingredients:

  • 1 lb. penne pasta
  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 lb. mushrooms, sliced
  • 1 can chickpeas, drained and rinsed
  • 1 tsp dried thyme
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup dry white wine
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Cook pasta according to package instructions. Reserve 1/2 cup of pasta water and drain remaining water.
  2. While pasta is cooking, heat olive oil over medium heat in a large skillet. Add onions and garlic, sauté until softened, approximately 5 minutes.
  3. Stir in mushrooms and chickpeas, tomatoes, thyme, salt, and pepper, cook for approximately 5 minutes.
  4. Pour in white wine and heavy cream, simmer uncovered for 10 minutes.
  5. Add cooked pasta to the skillet and toss to coat with sauce. If the pasta mixture is too dry, add in reserved pasta water 1 tablespoon at a time.
  6. Stir in the Parmesan cheese and parsley until cheese is melted and mixture is heated through. Serve hot.
